Pizza Party

Happy 4th of July, America!

Last night's pizza grilling endeavor was a huge success (and no fire extinguishers were necessary)!

Here's the play-by-play:  

1. I whipped up a double batch of my favorite thin crust pizza dough (recipe below) and froze half for a later date. Then, while the grill was heating up, I assembled and organized my toppings (organization is key for pizza on the BBQ!). I didn't take pictures until the pizzas were done because you have to move fast once those pizzas hit the grill!
  • For pizza #1, I used TJ's pizza sauce, shredded mozzarella, sun-dried tomatoes, and red onions and mushrooms sauteed in a little olive oil and garlic.
  • For pizza #2, I used homemade pesto (recipe below), shredded mozzarella, sliced black olives, and crumbled spicy italian sausage.
2. Roll out your pizza dough nice and thin and rub both sides with a little olive oil. Sprinkle one side with cornmeal (don't use flour, it burns).

3. Once the grill is hot, put the aluminum foil with the dough on it down on the grate, cornmeal side UP. Let it cook for 1-2 minutes, then slide the aluminum foil out from underneath the dough, so the dough is right on the grill. It will start to puff up and bubble a little. Let it cook for another 2-3 minutes. Use metal tongs to check the underside of the dough frequently. You want it browned with nice grill marks, but not charred/burned.

4.When the dough is ready, flip it over. It should not stretch or tear. If it does, you didn't cook it long enough. Here is where you have to be quick and organized. Top your pizza with the desired toppings. Don't use too much or your pizza will be too heavy and the dough won't finish cooking properly. The key here is simple pizza with quality ingredients.

5. When you're done topping the pizza, put the lid on the BBQ and let your pizza cook for about 5 minutes.

6. When your pizza is done (cheese should be nice and melted, dough should be cooked through - use your tongs to check the bottom again), slide the pizza off the grill with your tongs onto a waiting cutting board.

7. DEVOUR.

These were awesome! The crust was super thin and crunchy and the toppings were super fresh and delicious. Also, using the grill outside was so much nicer than heating up the oven (and, by extension, the entire apartment). This would be so fun to do when we have dinner guests over too! Since we don't eat very much meat, the BBQ doesn't get a whole lot of action, but I could see doing this at least once a week until it gets too cold.

In unrelated news, my SI is still super sore. I thought I might be able to run today, but I think I will do a spin workout and then some abs instead. This afternoon we are going to a fun 4th of July wedding at Santa Clara. It's not our normal celebration, but I'm still looking forward to some serious BBQ!

Thin Crust Pizza Dough
Yields 2 pizza rounds
This recipe is great - limited kneading and no rising! I use half whole-wheat and half white flour, but you could use all white if you prefer. I think all whole-wheat might make the dough a little heavy, but if you try it, let me know!

Ingredients
3/4c water
1/2t active dry yeast
2 cups flour (I use 1 cup white and 1 cup WW)
1/2t salt

Method
1. Heat the water until it feels barely lukewarm when you test it with your finger. Add the yeast to the water and use a fork or whisk to stir it into the water. Set this aside for a few minutes and allow the yeast to dissolve. It's ok if the yeast doesn't bubble, but it should be entirely dissolved.

2. Measure out the flour and salt in a large mixing bowl and combine.

3. Make a well in the center of the flour and pour the water-yeast mixture in. Combine everything together (I use my hands, but it's kind of stretchy/sticky/gross. You can use a wooden spoon)

4. When it comes together in a semi-cohesive ball, turn it out onto the counter with any extra flour left in the bowl.

5. Knead the dough until all the flour is incorporated and the dough is smooth to the touch - about five minutes. The dough should be slightly tacky. If it's still sticking to your hands and countertop like crazy, add 1T of flour at a time until you reach the right consistency.

6. Divide the dough in two. Work once piece of the dough in your hands until it forms a large disc. Then set the dough back on your work surface (I like to use parchment paper if these are going in the oven) and use the heel of your hand to gently press the dough outward until it's about 1/4 of an inch thick or less. You can also use a rolling pin for this.

7. If this is going in the oven, top your pizza and then slide the whole pie (parchment paper included) onto your pizza stone. (As it cooks, the dough will release from the parchment). If it's going on the grill, follow the steps I outlined above.


Fresh Pesto
Yields ~1 cup of pesto 
 

Ingredients
2c fresh basil
1/3c pine nuts or walnuts
3 cloves of garlic
1/3c olive oil
1/2 c parmesan cheese
Salt and pepper, to taste

Method
1. Combine the basil and nuts in a food processor. Add the garlic and pulse a few more times.

2. Slowly add olive oil in a constant stream while the food processor is on. Scrape down the sides with a spatula as needed. Add the cheese the pulse again. Taste and season to your liking.

The Verdict

Brian convinced me to go to the doctor yesterday about my back pain. The verdict? I have a sacroiliac sprain.

In layman's terms - I sprained my butt.

Not really, but kind of. I sprained the joint that connects my sacrum (that wide, flat bone at the base of your spine) to the iliac (the pelvis):

The sacroiliac joints are among the strongest in the human body. These joints possess a synovial membrane, and they are joined by strong anterior and posterior ligaments. Furthermore, these joints are extremely stable and have very little motion. The joints are, however, susceptible to injuries similar to those incurred in other joints... Sacroiliac pain is experienced as a dull ache in the bones above the buttock on one side. [source]

This isn't a new injury for me; I had similar pain about 2 months ago and it faded within a few days. My guess is that all the extra running I have been doing has aggravated the sprain which is why the pain was so much more intense this time. I am super fortunate to have a doctor who specializes in sports medicine and totally understands that the last thing I can afford (or want) to do is sit around and wait for a butt sprain to heal. She said that although SI sprains are usually caused by trauma (falling, stepping of a step wrong, etc), the cause can also be biomechanical. In my case, my left leg is longer than my right leg. While this probably didn't cause my SI sprain, it didn't help it. Additionally, runners tend to experience SI pain because, surprise!, we have tight hamstrings! The hamstrings attach to the bottom of the pelvis underneath your butt muscles. If they are too tight, they can pull the pelvis down, putting extra pressure on the SI joints.

Here are some super easy ways to prevent SI pain:
  • Warm up properly! Warming up ensures adequate shock absorption and strong support for the joints.
  • Build your muscles! Exercises that help strengthen the muscles around the hips (your core muscles) will provide support for the SI joint. Stronger muscles help hold a joint together and also provide additional shock absorption.
  • Stretch! Stretching prevents uneven pulls on your joints. Stretching your hamstrings and your piriformis muscle (your butt) will help prevent SI pain and dysfunction.
Looking over those three prevention strategies, it's no wonder I hurt myself! I am often guilty of not doing a thorough warmup, being lazy about core strength, and not stretching properly. I was feeling so smug for training so far without an injury, but this was a bit of a wake-up call. Time to get serious!

I got the OK to run if it didn't hurt and to swim or bike on the days that I am hurting. I tried going for a quick run last night, but only made it about 1.3 miles before I said, Forget this and listened to my body saying, I'm not ready yet! It feels a lot better today, so hopefully I'll be good to go for a run tomorrow.

Hopefully we'll also be back to our regularly scheduled programming of good eats soon too! I made some fresh pesto last night in anticipation of some pizza grilling this evening! Brian is getting his fire extinguisher ready! :)

Sidewalk Surfing

I took yesterday off (from blogging, that is) to spend the day at the beach with my mom. We shopped in Capitola, had lunch at Palapas, and then frolicked near the ocean at Seascape (where Brian proposed!). It was a wonderful, relaxing, beautiful day. I even picked up these cute shoes:

Aren't they adorable?! They are the new Sidewalk Surfers from Sanuk and they are so comfy. They have a rubber, flip-flop sole with a canvas upper and are super lightweight. I am looking forward to wearing them all summer long (and probably buying more...).

The hubs came home yesterday afternoon and we celebrated with iced lattes and leftovers. My sister-in-law and I watched a little Losing it with Jillian (have I mentioned that my SIL is living with us these days? She's actually been here for 6 weeks but is moving out this weekend) and then had a baking party in the kitchen. Carrie whipped up a batch of Camper's Chocolate Chip Cookies and I made some decadent double chocolate brownies (recipe below). I think I am going to try grilling pizza tonight!

I am scheduled for a 4-mile run today, but I've had a little nerve pain in my lower back lately that got pretty intense last night, so I'm going to rest up today and see how I feel this evening. I have 8 miles scheduled tomorrow (my longest run yet!) and I want to be able to do it pain free. Brian thought it might be my sciatic, but the pain is a little too high and centralized (it's just to the left of my coccyx) and doesn't run down the back of my leg. Any ideas?

This morning I made Brian an oatmeal pancake (because I forgot to buy his cereal while he was away - oops!). These were so easy and yummy! Last night I mixed together 1/2 cup of oats, 1 egg white, 1/4 cup of applesauce, 1/2T vanilla, and 1t baking powder. This morning I mixed in 1/2 a mashed banana and poured the mixture out on a hot grill. B ate it with warm maple syrup and said it was better than regular pancakes. Yum!

As promised, here is my brownie recipe. I originally intended to use 1/4c sugar and 1/4c agave nectar, but realized I was running low on agave, so (to celebrate my sweet-tooth husband being home), I just used all sugar. Ashley used sucanat and brown rice syrup in her version of these, which would be great, but would have required an extra trip to the store for me. Using sugar does not bother me as much as using oils and fats (I eat so little sugar to begin with), so I was perfectly happy sugaring these up!

Double Chocolate Brownies
[adapted from Mama Pea & The Edible Perspective]

Ingredients
  • 3/4c WW flour
  • 1/3c unsweetened cocoa powder
  • 2t baking powder
  • 1/2t baking soda
  • 1c unsweetened applesauce
  • 1/2c sugar
  • 2t vanilla
  • 1/2c chocolate chips
  • 1/2 salt
Directions
1.    Preheat oven to 350*
2.    Mix flour, cocoa, baking powder + soda, coffee, and salt together in a large bowl.
3.    In a medium sized bowl combine applesauce, sugar, and vanilla until combined.
4.    Pour the wet into the dry and mix by hand until combined. Make sure to scrape the bottom of the bowl but do not over mix. The batter will be somewhat lumpy.
5.    Let rest for a few minutes and then mix in chocolate chips.
6.    Pour + spread evenly into an 8×8 greased pan.
7.    Bake ~20min until edges pull away from the pan or toothpick test.
8.    Let cool for at least 30min before cutting out of pan.

These were just as delicious as I imagined they would be. Sweet and chocolaty and dense... Yum. I might take Ashley's suggestion and add instant coffee to them next time. These might be some of the best brownies I have ever made - you need to make them right now!
